How To Cook Eggs Perfectly
How to fry an egg properly, like a professional chef, is a time honored skill, that sadly, many people overlook. Many times, when I've interviewed for a cook's position, one of the tasks set out for me was to fry an egg or make an omelette while the chef or sous chef watched me.
The egg had to be cooked over easy, with no browning around the edges. They also wanted to see you flip the egg in the pan without breaking the yolk.

How To Cook Eggs Like A Professional Chef
Yield: 1 serving- Prep Time: 5 minutes
- Cook Time: 5 minutes
Ingredients
- 1 large egg
- 2 Tbsp. unsalted butter
- Kosher salt and freshly ground black pepper, to taste
Method
- Do not preheat the pan.
- Place a small non-stick frying pan over low heat. Add 1 tablespoon of the butter and let it slowly melt, making sure it doesn't foam or sizzle. When all the butter has melted, crack the egg into a small bowl, taking care not to break the yolk.
- Gently slide the egg into the pan and cook until the white has just set and the yolk is warm but still liquid.
- Meanwhile in another small saute pan heat the remaining tablespoon of butter over medium-low heat until it just begins to brown slightly, without sizzling. Immediately remove the pan from the heat.
- Plate the egg on a warm plate, season with salt and pepper to taste, and pour the browned butter over the cooked egg.
Notes
- With eggs it is important to use the freshest eggs you can find. When frying more than 1 egg at a time, add eggs together. Crack the eggs in a dish and gently roll them into the pan.
- The hotter the pan the greater the likelihood that the butter will scorch when it hits the pan.
Garlic Eggs
Garlic eggs are my favorite way to eat eggs. When I was a kid my grandmother would make these for me. She would brown that garlic so beautifully, and fry that egg perfectly. Then she would pour the olive oil on top of the egg and give me a chunk of homemade Italian bread to sop up the yolk and olive oil.
Now when I make these it reminds me of her. It makes me sad and happy all at once. This is how comfort food should make you feel.
Ingredients or mise en place.
Cook over medium-low until the garlic just begins to brown slightly. This is what you want, the garlic will reach a beautiful golden brown by the time the egg is cooked.
Notice the garlic is perfectly browned: plate the egg, pour the olive oil over, season with salt and pepper.

- 2 Tbsp. extra virgin olive oil
- 2 cloves garlic, chopped
- 1 large egg
- Kosher salt and freshly ground black pepper, to taste
Method
- Do not preheat the pan.
- Place a small non-stick frying pan over medium-low heat. Add the olive oil and garlic.
- Cook over medium-low until the garlic just begins to brown slightly.
- Crack the egg into a small bowl, taking care not to break the yolk.
- Gently slide the egg into the pan and cook until the white has almost set.
- Using a teaspoon or tablespoon, baste the egg to set the top of the whites.
- Plate the egg on a warm plate. Pour the olive oil over the egg. Season with salt and pepper to taste.
Notes
- When frying with extra virgin olive oil, or any oil, it is critical to not overheat the oil. As oil heats up it begins to slowly breakdown, releasing carcinogens. Over-heating accelerates this process
- When you are frying eggs with garlic, if you flip the eggs over in all likelihood the yolk is going to break.
- Basting is simply scooping oil from the pan and spooning it over the top of the food you want to cook or brown.
